mango salsa

This past weekend, after a full day of canoeing, Oscar and I hosted a small taco night. We only had two friends over [shocker] but I managed quite a spread. I did a basic shredded chicken and beef with various toppings. But there are two dishes that are continually stars among the tacos. hehe. The first is my black bean salsa that can be used on top of tacos, chicken, or a chip. The second is my mango salsa. 

Now for some honesty. That's not my photo. Hence the link below. I was burnt with bug-bites and exhausted. Don't judge me. And I don't like mangoes. At all. But it seems everyone else does and my husband is a big fan so I whipped this sucker up one night with leftovers in the fridge and it's been a favorite ever since. 

1 mango, chopped
1/2 small red onion, finely shopped
1 jalapeno, seeded and finely chopped
1 bunch of cilantro, chopped fine
juice of 2 limes
1 Tbsp of honey

It's better if you can make it the night beforehand and feel free to omit the jalapeno.
