roasted potatoes with bacon jam and "fonduta"

On our trip to Philly, my favorite restaurant was an Italian place by the river. I talked about our potato appetizer for days after and pledged to recreate it at home. The time has come. Crispy potatoes pair up with a spicy bacon jam and a creamy, cool sauce. It's a bit time consuming for some steps but it's beyond worth it.

I started off with the bacon jam since it was the longest to prepare. Since I knew I would have to recreate the other parts of the dish, I just followed an already made recipe for this part. I figured I could edit it the next time I made it if I wasn't pleased. But boy, was I pleased. I followed Spoon Fork Bacon's recipe and it was amazing. It was on the spicier side for me but nothing I couldn't handle. And that's obviously something you can change yourself if you're wimpy like me.

For the potatoes, I thickly chopped gold potatoes and placed them on a parchment paper lined baking sheet. I tossed them with olive oil, salt, pepper, and oregano. I placed them in a preheated oven at 400 degrees for 20 minutes. After that, I removed them, flipped them over and placed them in the oven for an additional 20 minutes. Once they were done, I sprinkled them with parmesan cheese and placed them back in for 5 more minutes but if you're short on time feel free to skip that step. 

In the restaurant, the potato dish was sitting on top of a warm cheese mixture. But it wasn't a stringy gooey cheese. It was something that had the texture of sour cream without the flavor. It was very bland in a good way. It let the rest of the dish do the talking while lending texture and a coolness. After considering an elaborate cheese sauce, I skipped ahead to the dairy section of the grocery store. 

I ended up mixing softened cream cheese one to one with ricotta. You can warm it to make it easier to mix. It was perfect. It was soft, light, with a bit more zing than the original but I liked that. It was perfection. Layer it all together and make a meal out of this bad boy. I won't judge you.
